Stuffed Tomatoes Recipe That is Simple and Delicious

Let me start this recipe post out in an interesting way by telling you I don’t love to cook. The only time cooking is of interest to me is when it is a recipe that is easy, yummy and one my whole family will enjoy. So now you can be sure this is a dish we love and one that is on constant rotation within our home, all year long. Did you ever eat foods as a kid you disliked and said you wouldn’t eat when you grew up?

Growing up I used to eat stuffed peppers. I didn’t particularly like them when I was younger, but as I got older I grew to love them.

Much like when I was a kid, my own kids weren’t a fan either. Since they are obsessed with tacos (I mean who isn’t),  I decided to put a spin on taco-style stuffed peppers. That is when my stuffed tomatoes recipe that is simple and delicious was born.

The best thing about this recipe, besides the fact that it is easy, is you can swap out many of the ingredients to make it your own, even make it vegan if you wish.

Stuffed Tomatoes Recipe

Simple and Delicious Stuffed Tomatoes Recipe 

  • 4-6 Large Tomatoes
  • 1 lb. Ground Turkey ((or whatever meat or veggies you choose))
  • 10 oz. Brown Rice
  • 1 jar Marinara Sauce
  • 12 oz. Corn
  • 1 package Mexican Style Shredded Cheese
  • 1 Avocado
  • 1 Lime
  1. Pre-heat the oven to 350 degrees and then start to slice off the top of each tomato and scoop out the inside to create a bowl. Place tomato bowls in a foil lined baking pan. 

  2. Brown the ground turkey along with some garlic and olive oil. I also like to squeeze a lime over the meat while it’s cooking.

  3. Mix the brown rice, corn and marinara sauce into the ground turkey mixture and season to taste. I use a little taco seasoning, salt, pepper and garlic salt. I also add some shredded Mexican style cheese to the mixture and combine. 

  4. Scoop the mixture into the tomato bowls (I pack it tightly to fit a lot in), then top with shredded cheese.

  5. Put the baking pan with the tomatoes into the oven for about 15 minutes or so. I like to get the cheese on top of mine nice and brown. 

  6. After you take the tomatoes out of the oven I serve them with a slice of avocado on top and a lime wedge.
