One of my goals for this year is to create and eat more dinners at home. This can sometimes be tough to accomplish between my family’s work and school schedules, after school activities, social lives and more, but I am really going to try.
Tonight started out a bit shaky trying to achieve my goal because it’s almost the end of the week (yay for the weekend!), and I have to admit my refrigerator is starting to look a little empty.
I knew I had limited time to throw a meal together since my husband and son had to head to basketball for the evening, so I started quickly scanning the pantry. I always make sure to have some type of pasta and sauce on hand so I grabbed that. Next I checked the crisper drawer in our fridge and I found zucchini, squash and shredded cheese, so I put that on the countertop too.
I started thinking and I remembered an Instagram picture I saw a while ago of zucchini pizza boats. Since I only had 2 zucchinis I figured that wouldn’t be enough boats to feed my family of four, so I decided to create something that I was almost positive we would all love…
Let me show you how to make mini zucchini pizzas in 4 simple steps:
- Cut zucchini into 1/4 inch slices, lay the slices on a baking sheet and drizzle them with extra virgin olive oil. (I put them in a 400 degree preheated oven for about 5 minutes to soften the zucchini up.)
- Take the zucchini out of the oven and spoon marinara sauce onto each slice.
- Top with shredded mozzarella cheese, mini turkey pepperoni slices & sprinkle some oregano.
- Bake in the oven for about 10 minutes, until the cheese is melted and golden brown.
This simple, delicious and somewhat healthy meal took me only about 20 minutes total to create. My family practically inhaled these mini zucchini pizzas and even asked for more!
